RECIPE - KFC INSPIRED MASHED POTATO BOWL

Okay guys. Get ready for the best meal of your life : our own vegetarian mashed potato bowl.

Okay, not really. But it’s PRETTY GOOD. 

If you’re not familiar, fast food giant KFC has a lovely little item on their menu called the “KFC Famous Bowl”. This is our own vegetarian version. It’s got all the best shit – buttery mashed potatoes, gravy, corn, melt-y cheese, and crispy fried chicken (in our case, imitation chicken).

The best part about this meal is that you can make it as simple or as complicated as you want. Jon and I regularly made a STUPID simple version of this Mashed Potato Bowl for a stint where we were living with friends and had very little kitchen access. It consisted of instant mashed potatoes, instant gravy, canned corn, pre-shredded cheese, and Whole Foods Chickenless Nuggets. It was surprisingly delicious, and it took us about 12 minutes to make from start to finish (using an air fryer and electric kettle). For those of you who are living in dorms, or in a shitty situation like we were, a poor man’s version of this dish is something you may want to try out.

For our vegetarian mashed potato bowl in particular, we wanted to find a middle ground. Something tasty, that wouldn’t take 8 hours of slaving away at the stove, and sacrificing our first born child to make. This recipe is the result. The two real substitutions you have to make in order for this to become a vegetarian dish is the gravy and fried chicken. For the fried chicken, we went a version of our home made seitan fried chicken (recipe coming soon!!) in order to get a finished product more like KFC’s Famous Bowls. Really, any vegetarian imitation chicken tenders would work. The gravy was a little trickier. It’s incredibly hard to find vegetarian gravy mixes that would even almost resemble a product similar to KFC’s gravy. The gravy recipe I have below is what I call my “Lazy Gravy”. It is pretty goddamned full-proof, and this is my go-to gravy recipe for pretty much everything. I’m not going to pretend it tastes like KFC gravy, but it’s a deliciously meaty tasting pan gravy that will make you forget it’s fully vegetarian.

Don’t be afraid to try your own substitutions or play around with the complexity of the meal. If you want to go HAM making your own vegetarian fried chicken and caramelized onion gravy, then go for it! If you just want to slap together a quick meal after a day working retail where a bunch of Karens scream at you  all day I WANT TO SPEAK WITH THE MANAGER – This dish is great for that too.

KFC Inspired Mashed Potato Bowl

Mashed Potatoes
 3 Medium Russet Potatoes (639g)
 3 tbsp Milk
 1 tbsp Butter
Gravy
 2 tbsp All-Purpose Flour
 8 oz Cold Water
 1 "Chicken" Bouillon Cube
 1 tsp Better Than Bouillon "Beefless" Base
Toppings
 ½ cup Shredded Cheddar Cheese
 3 Imitation Chicken Tenders
 ½ cup Corn
Tools
 Vegetable Peeler
 Chopping Knife
 Cutting Board
 Medium Pot with Lid
 Potato Masher
 Blender Bottle (or some kind of shake-able container with lid)
 Small Pan
 Wisk
 Serving Spoon
 Small Bowl
 Strainer

DIRECTIONS

Peel and cube 3 Medium Russet Potatoes.

Add cubed potatoes to a medium pot and fill with water until the water fully covers the potatoes. Place a lid on your pot.

Heat the potatoes on the stove on medium high heat. Let boil for ~20 minutes, or until potatoes are soft.

Using a strainer, drain the water from the potatoes and place back into pot.

Using a potato masher, or a hand mixer, mix 3 Tbsp of milk and 1 Tbsp of butter into the potatoes. Keep mixing/mashing until the potatoes are smooth and creamy.

Before starting the gravy, start heating up your corn and imitation chicken per the instructions on the packaging.

*NOTE: For our recipe, we reheated our own frozen Meal Prep Seitan Fried Chicken for 8 minutes in an air fryer @400 degrees F.

Fill a blender bottle (or other shakeable container) with 8 oz of cold water, and 2 Tbsp of all purpose flour. Seal the container and shake for about 30 seconds until the flour and water have fully combined.

NOTE: Don't put the flour in the container first, or it will be more difficult to mix it. It also helps significantly if the water is cold.

Pour the flour/water mixture into a small pan and heat on medium until thickened (about 5 minutes). Make sure to stir frequently to occasionally to avoid lumps.

Stir in 1 "chicken" bouillon cube, and 1 tsp of beefless base until the gravy is a uniform color.

You should now be ready to assemble your mashed potato bowls!

Using a serving spoon, divide the mashed potatoes into two bowls. Top each bowl with 1/2 cup of corn, 1/4 cup shredded cheddar cheese, and 1 1/2 "chicken" tenders.
