Better Than Bouillon’s No Beef Base has been a staple in our pantry since we first went vegetarian. I find myself always finding excuses to use it in new dishes and recipes. Thanks to this No Beef Base we’ve been able to create vegetarian dishes that taste identical to their meat-filled counterparts. The real problems with this product are the price, storage requirements, and general availability.
What Is It?
It’s a funny brown goo that makes food taste like cows. But really, it’s a bouillon, which means you can use it to add flavor to stocks, broths, and soups. The company Better Than Bouillon is not a company that focuses on creating vegetarian and meatless alternatives. They focus on bouillon, which I’m sure may come as a surprise considering the company name.
Better Than Bouillon’s No Beef Base focuses on using premium ingredients to achieve a deeper, richer, better flavor than your average powered beef bouillon or bouillon cubes. The No Beef Base comes in 8oz jars, which must be refrigerated once opened. The expiration dates on the product are not very generous, so be careful if purchasing online. We usually purchase this product from Better Than Bouillon’s website. When doing so, the expiration dates have always been at least a year out from the date of purchase. Purchasing from Amazon, however, was a different story. Our first jar we bought expired about two months after the purchase date. The bouillon ended up going bad WAY before we could finish the jar.
Better Than Bouillon used to offer the product in 3.5oz and 8oz jars, with the 3.5oz version being about $4.00, and the 8oz version running at $7.29. Right now, they’re only offering 8oz jars on their website, so it’s unclear if they will continue to offer the 3.5oz jars. Availability for this product is generally not great. I have yet to see the product in a Whole Foods or even any specialty grocery stores.
How Does It Taste?
It tastes very beefy, and surprisingly not that salty (at least for a bouillon). The paste nature of the bouillon makes it incredibly versatile. Adding a few teaspoons of the stuff is an easy way to add flavor to any dish. The paste can get pretty firm once in the fridge, but the bouillon practically melts when met with heat, so make sure to stir it into your dish while it’s hot.
I’ve used this No Beef Base in a lot of dishes, and I’ve never once been disappointed by the flavor it adds. You can use this to make beef stew, burgers, meatballs, steak, French onion soup, beef gravy, taco meat, curry, or our very own KFC Inspired Mashed Potato Bowls. There’s no funky flavor or odd after taste to this stuff. It’s pretty incredible the beef flavor they’re able to create out of what is essentially a vegetable bouillon. Following their instructions leaves you with the perfect imitation beef broth – no doctoring needed.
The level of imitation that this product provides is second to none. This would be a (very rare) 10/10 rating if it weren’t for one thing: the price. At $7.29 for an 8oz jar, they have my metaphorical balls in a vice here. This is a product I absolutely cannot go without in my kitchen. I’m sure you will find it featured in plenty of the recipes I post on this site, but it pains my frugal little soul every time we have to replenish our stock of the stuff. Expensive or not, this rich umami vegetarian bouillon has absolutely changed the way we cook. It brought so many non vegetarian foods back into our lives that I never thought we’d be able to eat in on a cruelty free diet. For that reason alone, I will be eternally grateful to Better Than Bouillon for bringing this product into existence.
